Key Information:
King Salmon, or "Chinook", are the largest and most prized of the 5 species of wild salmon. These fish spend an average of 3 to 4 years in the ocean before returning to their home rivers to spawn. Commercial Salmon season is closely regulated with seasons that generally begin around May and run through the Fall.
What you’re *NOT* getting:
Farmed Salmon! Due to the densely packed living conditions of farmed salmon, these fish tend to be loaded with nasty chemicals including PCB's and dioxins. Farmed salmon also require a feed ration of 6 pounds of wild forage fish to produce just 1 pound of farmed salmon. This practice depletes the ocean of food that wild fish need to survive.
Tasting Notes:
King Salmon is rich in flavor, high in fat content, and with it's flesh containing large, delicate flakes, it lends itself to a wide variety of cooking applications. Salmon is also loaded with heart-healthy Omega 3 fatty acids!
